Midnight Maple

 Sorry, we are currently out of Maple Syrup.

Pure Maple Syrup from our farms in Preston County.  No preservatives or additives.

Midnight Maple is a combined product of Evans Knob Farm and Alden Acres Farm, owned by Kim and AJ Sheets.

Trees are tapped and sap collected on both farms and combined at the Sugar Shack on Alden Acres where the evaporation process takes place.  It takes approximately 40 gallons of sap to make one gallon of syrup.

Evaporation is a boiling process necessary to remove excess water from the sap leaving a concentrated sweet substance known as syrup.  It can be bottled at the point or taken a few steps further into maple cream, maple candy and other delacies sure to please at least 3 of the 5 senses.

Midnight Maple got it's name because Reid and AJ both have jobs off the farm. Therefore, they need to boil the sap down after work or on weekends.  In a good year, when there is large quantities of sap, that often means they must boil around the clock on weekends.
